New York State is home to some distilleries worth discovering. We’re proud to introduce guests to these regional selections of spirits, and the spirited stories behind them.


Widow Jane, Rosendale Brooklyn {$10}
In 1970, the last Rosendale limestone mine closed down. Its owner, A.J. Snyder, was known as a cruel boss and an even crueler husband. His wife Jane, however, was a beacon in the Rosendale community and beloved by all for her kindness and pure spirit. Hence when Snyder passed, the Rosendale Limestone Mine became known to all as the Widow Jane Mine in her honor.

Hudson Baby Bourbon, Gardiner {$10}
The first bourbon distilled in NY, this Hudson Valley whiskey is made in very limited quantities with over 90% of the ingredients coming from a 10-mile radius around the distillery.

About the Chef

Chef Raymond Wells

Chef Ray discovered his passion while cooking with his grandmother in Syracuse. He started his culinary journey working in the deli department at Wegmans. His passion for the culinary arts eventually led him to the prestigious Culinary Institute of America (CIA), which helped him land an internship at Turning Stone. After graduating from the CIA, Chef Ray returned home to Upstate New York and began working full-time at Turning Stone as a cook. He worked his way up through the ranks, fine-tuning his craft along the way, and eventually earned a spot as Chef de Cuisine at one of Turning Stone’s most awarded restaurants, TS Steakhouse.
